Irish Soda Bread ~ From The Anchoress
Thank you to Sun Comprehending Glass for hosting this week's Carnival of the Recipes. (That is one of the most cool blog names I've seen.)
Here's a recipe for Irish Soda Bread that The Anchoress graciously submitted for inclusion in my cookbook BLOGALICIOUS. I haven't made the recipe yet, but plan to make it for St. Patrick's Day breakfast.
Here is the recipe, exactly as she wrote it:
MARIA LUCIA'S IRISH SODA BREAD
I got this recipe, btw, from my Italian mother in law!
4 cups sifted flour
1-1/2 teaspoons baking soda
1 teaspoon salt
3/4 cup sugar
1 cup raisins
2 tablespoons melted butter
2 eggs - beaten
2 cups buttermilk
Mix dry ingredients. In another bowl, mix butter, eggs and buttermilk. Stir into dry ingredients. Use a 2 qt. pan (like a pyrex) because it works the best. Bake at 350 degrees for 1 hour and 25 minutes.
